Bring water to boil and cook the noodles as per package instructions or until al’ Dante. Strain the cooked noodles, drizzle a tsp of oil and toss to well coat. Set them aside until needed.
Heat a wok with oil. Stir in green Chilli, ginger, garlic and cook for a minute.
Add in the prepared vegetables except Scallions.Keep stirring and cook on high heat for few seconds. Just make sure that they retain their crunch.
Now stir in the sauces along the salt, ground pepper and vinegar.
Cook for a minute or two until oil floats on top.
Stir in the cooked noodles and mix well to combine with cooked gravy.
Check the seasoning and top it with chopped Scallions.
Chilli Schezwan noodles are ready to be served along some condiment of choice.
